Production Module
The Production Module contains projections of items needed for a specific meal, day, and serving area. Excess food production and excess purchasing of inventory items are controlled through forecasting quantities based on previous usage. Recipes are automatically generated based on the predicted amounts to aid in controlling food production. Predictions of the amount of food and supplies needed for a forecast are gathered from a menu tally or calculated from historical data.
Grocery lists and storeroom requisitions created directly from each forecast help to control over production, while ensuring enough product is prepared to meet the average demand. Food items can be added to or deleted from grocery lists or storeroom requisitions to control inventory.
The user can also determine the cost of a menu before it is served, based on the number of portions forecast. The speed and accuracy of this system in extending recipes and generating grocery lists allows the manager to devote more time to other important management functions.
The Production Module produces many detailed reports. Included among these are:
Pre and Post Menu Cost Reports: Cost per serving, extended costs, and acceptability of forecasted items based on projected and actual patron counts by cost center.
Menu Items by Item Price: List of forecast items by descending cost per serving for a specified date range.
Grocery Lists: Amounts of items needed to be purchased for a given period of time.
Storeroom Requisitions: Quantities and costs of forecast items needed for a particular cost center or production area to be requisitioned from a storeroom or ingredient room.
Production Area Schedule: Recipe amounts that need to be produced daily by each production area. Ingredient labels are also available.
